The best cream of potato soup, ever!

    One of my aunts showed me how to make this, it's delicious, but definitely not for dieters or people on low-fat diets:

    Russet potatos
    2 sticks butter, room temperature
    1 pint of heavy cream or half-and-half
    Salt and pepper

    Peel 4 or 5 large russet potatos, rinse, and cut into pieces a little bit bigger than bite-size (don't you just love these exact measurements? :))

    Toss into large pot, cover with water, bring to boil.

    Cook until just underdone. The exterior should fall away easily when poked with a fork, but the interior should still be just a little firm.

    Remove from heat. DO NOT DRAIN! Add the butter, stirring gently until melted. Continue stirring, slowly adding the cream or half-and-half.

    Return to heat, cover, and simmer on low heat for about 30 minutes more, stirring once in a while.

    Season to taste with salt and pepper. Serve in deep bowls with crusty bread and a salad. Garnish the soup with crumbled bacon, shredded cheese, or whatever you like.
