Let's Have Salsa Recipes

    ShinyTop I know what is right or wrong!

    I love salsa but have grown tired of the same old salsas in the store. Anybody here make their own and be willing to share their recipes? My taste runs to medium. I like to feel heat but not have it be an endurance contest between me and the jalapeos.

    A mexican style picante with a Mediterranean flair.

    1 can black beans (drained)
    3 large tomatoes (diced)
    1 vidalia onions (diced)
    1 can green chilies
    1/4 cup fresh shredded ginger
    1/2 cup olive oil
    1/2 cup balsamic vinegar
    1/4 cup finely chopped garlic
    1/2 cup finely chopped cilantro
    1 medium cucumber (peeled,chopped, and pureed)
    1/2 cup sweet corn
    salt and pepper

    1. combine all ingredients and chill.

    You can add more heat by adding as many chopped jalapeos as well to the recipe. The ginger and black bean provide enough of a taste sensation for my wife that I don't add more than the green chilies. She likes things no more than medium while I can take really hot and spicy food. There is a Mexican restaurant near us that serves fresh salsa and depending on the chilies can be hot as their all fresh grown. So every once in awhile she can't eat what they make! Major bummer. Hope you like the recipe. Black bean can be an acquired taste, so if you don't like it, omit them and the ginger and add the jalapeos.

    Not a salsa, but another good dip for tortilla chips...

    2 cans of hormel chili
    1/4 pound of jalapeno cheese
    1/4 pound of colby cheese
    1 teaspoon oregeno
    1 teaspoon basil
    dash of lemon juice

    Nuke in microwave for about 5-10 minutes (until all cheese is melted)
