Jalapeno Cornbread

    1 cup yellow cornmeal
    1 tablespoon sugar
    1/2 tablespoon baking powder
    1 teaspoon salt
    2 eggs beaten
    1/2 cup bacon drippings
    1 can (8 ounce) yellow creamed corn
    1 large onion (diced)
    1/2 to 3/4 pounds Cheddar cheese, grated
    1/4 cup jalapeno pepper, seeds removed
    1/8 cup pimento
    1 pod garlic, squeezed through press
    1 tablespoon hot sauce

    Mix above ingredients in order of succession. Pour into well greased casserole or baking dish/pan. Bake at 400 degrees for 35 minutes.


    You can substitute cooking oil for the bacon grease in a pinch, but it won't be as tasty.

    Oh yes, this is a keeper. Since I am taking Zocor and Tricor my docs don't have to know about this recipe ;) Besides, everything in moderation. You bet the seeds removed. That's where the real heat is.
